Today we are drinking the Fall seasonal Carolina Oktoberfest Lager out of the Carolina Brewing Company of Holly Springs, just south of Raleigh. In 1994, with financing secured from one bank and a whole bunch of friends and relatives, Carolina Brewing Company was founded and the equipment was ordered. Their business is close to home in the surrounding counties and they grew a big market share to make their Carolina Pale Ale one of the best selling beers in the Triangle. Of the Oktoberfest they say, it “is a smooth, amber lager with caramel and toffee malt flavors, noble hop flavors and a slight warming sensation from the higher than average alcohol content at 5.6% ABV. Balance is important. Fermentation and lagering take place over a six week period at cool temperatures to produce the smooth round flavor.”
