Today we are drinking the Mother Shucker Oyster Stout an annual collaboration from The Front Street Brewery in Wilmington and NoDa Brewing Company in Charlotte. Mother Shucker is described as “A unique dry stout with a coastal twist: fresh local oysters. Adding shells into the mash & meat into the boil creates a creamy, fuller body with a subtle, savory briny character. They used Stump Sound Oysters from Eagle Island Fruit and Seafood to help in the process. The oyster shells are dropped into the mash sparging and the meat is placed into a bag and the bag is dropped down into the boil kettle for the last 15 minutes of the boiling process,” The roasted toasty flavor from the malt and the oyster shell flavor create this dark, briny beer.
